i will admit i have never had good tofu at an american restaurant, but this is largely because they are usually busy torturing it into either the Ultimate Health Cube or some kind of wannabe meat.
good tofu is tender, savory, flavorful, slathered in gravy or soaked in soup; if fried, tofu should be crisp outside and meltingly soft within, and should in no way resemble a purgatory burger. frankly, i doubt that most tofu dishes are especially healthy... i mean i guess healthier than burger and fries but that is a very low bar.
